I have recently been working through a fitness program called 80 Days Obsession and what is new for me is the focus on timed nutrition. I just completed Phase 1 and now in Phase 2 our meal plan changes and I am allowed a carbohydrate at dinner. Woo hoo!! This Easy Quinoa Salad was first choice for a quick side tonight.
I made this side dish recipe with tri-colour quinoa for no other reason than it looks pretty! And let’s face it it is what I had in my cupboards. In fact what I love about this recipe and why it is so simple is just that All of these ingredients are usually found in my house so in a pinch this is a quick go to.
This salad has always been a saviour on those occasions where I have totally forgot I need to bring a dish to a party and am in a panic. This Easy Quinoa Salad take about 15 minutes total to make and you can make it into a large salad easy but just doubling the recipe.
Rinse quinoa under cold running water for a minute or two to remove the bitter taste quinoa can have.
Add one cup of quinoa to 2 cups of boiling water. Reduce heat and simmer for 15 minutes or until liquid is absorbed. While the quinoa is simmering chop up the onions and peppers. Throw them into a bowl with the cooked quinoa and season with the dressing mixture.
Told you… super fast!
For those who like to prep their meals on the weekends I highly recommend making ahead so you can have during the week. Add some chicken and this makes a great lunch!
Plus the longer this recipe sits the more the flavour really sets in….but don’t go nuts… after 5-7 days you need to part ways with this salad and throw it out… that is if you have any left over.
You can also add some chick peas or beans if you want to make this a vegan dinner. Substitute the honey for maple syrup or your favourite sweetener. The honey just takes a bit of the bite out of the vinegar

This Easy Quinoa Salad is super fast to make and excellent as a side dish for any weeknight meal.
- 1 cup quinoa rinsed
- 2 cups water
- 1 red pepper chopped
- 1/2 green pepper chopped
- 1/3 cup red onion chopped finely
- 3 tbsp white wine vinegar
- 2 tbsp olive oil
- 2 tsp honey
- salt and pepper to taste
Rinse quinoa under cold water for 1-2 minutes
Add quinoa to bowling water
Reduce heat and simmer for 15 minutes or until all of the liquid has been absorbed
Chop red onion, red pepper and green pepper
In a small bowl add olive oil, vinegar and honey. Mix well
Once quinoa is complete remove from stove and empty into a large bowl
Add peppers, onion and oil and vinegar mixture and mix well
Add salt and pepper to taste
