Easy Crockpot Chili

Chili is just one of those things that is a perfect meal for a fall or winter day.   What makes chili even better is how easy it is to make in a crockpot.  Get prepped the night before if you like or in the morning, set it and forget it and it is ready when you get home.  This Easy Crockpot Chili is great if hanging out at the ski lodge is your thing.  Turn it on before you head out and when you come back… lunch or dinner is served!

Crockpot Chili

This Easy Crockpot Chili recipe is not only great tasting but is 21 Day Fix Approved!  I prefer to make it with extra lean ground beef but it can also be made with lean ground turkey.  I don’t like to use pre-packaged seasonings because they usually contain too much salt and additives I can’t pronounce.  In this recipe I have included the recipe for homemade chili seasoning.  Makes double what you need when done store in air tight container labelled and use it for the next time!

Adjust the spiciness by adding in more cayenne or chili powder to your liking.  You can also add some finely diced jalepeno peppers.  Adding 1/2 a jalapeno pepper is usually how I make it when the kids are eating it with us as it adds just a tiny bit of spiciness without hearing the howls of how their mouths are on fire.

Ingredients

  • 2 lb extra lean ground beef or turkey
  • 1 can low sodium kidney beans rinsed
  • 1 green pepper finely chopped seeds removed
  • 1 small onion finely chopped
  • 1 can crushed tomatoes
  • 2 cups of beef broth
  • 2 cloves garlic minced
  • 1 jalepeno pepper finely chopped seeds removed I use only 1/2 if kids eating
  • 1/2 cup shredded cheese cheddar and/or mozzarella
  • 4 tablespoons of chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • 2 tablespoons ground cumin
  • 3 teaspoons sea salt
  • 2 teaspoons black pepper

Instructions

  1. In a frying pan brown meat until no longer pink. Drain fat from meat well and add to crockpot.
  2. Add onions, garlic, green peppers and jalepeno to the frying pan and sweat until onions are transparent and green pepper soften a little. Then add to crockpot.
  3. Add kidney beans, crushed tomatoes and beef broth to crockpot and stir.
  4. Add in 1 1/2 tablespoons of Chili Seasoning and mix well. Taste and add more depending on preference.
  5. Simmer on low for the day or on high for 3-4 hours.
  6. Serve topped with some shredded cheese

Chili Seasoning: (Recipe Adopted from My Baking Addiction)

  1. Combine chili powder, garlic powder, onion powder, cayenne pepper, oregano, paprika, cumin, sea salt and black pepper in a small bowl.
  2. Store in an airtight container for later use up to one year.
